Sambar

Ingredients :

  • Split red gram/Yellow lentil(Tur dal) - 1/2 Cup
  • Tomato - 1/2 Cup
  • Vegetables - 1 Cup
  • Curry leaves - 4-5
  • Coriander leaves - 1/4 Cup
  • Sambar masala - 1 Tbsp
  • Red chili powder - 1/2 Tbsp
  • Mustard seeds - 1/2 Tsp
  • Cumin seeds - 1/2 Tsp
  • Fenugreek seeds - 4-5
  • Asafoetida(Hing) - 1 Pinch
  • Turmeric - 1 Pinch
  • Water - 3 Cups
  • Tamarind Juice (Thick)- 1 Tbsp
  • Jaggery - 1 Tbsp
  • Oil - 2 Tbsp
  • Salt
Procedure :
  1. Wash Tur dal, add diced tomato, turmeric and water and cook in a pressure cooker.
  2. Mash tur dal and add water.
  3. Cut onion lengthwise.
  4. Cut all vegetables (cauliflower, carrot, Potato, beans, drumsticks, pumpkin,.. ..) lengthwise.
  5. Heat oil in a pan.
  6. Add mustard seeds to splutter.
  7. Add cumin seeds, fenugreek seeds, curry leaves and asafoetida.
  8. Add onion and fry.
  9. Add all vegetables, mix well.
  10. Add chopped tomatoes.
  11. Close the lid and cook for 3-4 min.
  12. Add sambar masala and mix well.
  13. Add tur dal solution.
  14. Add tamarind juice, jaggery, red chili powder and salt.
  15. Boil for 3-4 min.
  16. Garnish with coriander leaves.
